Keep Calm and Eat Pie!

Let’s be honest. The holidays can be stressful. Crowds. Parties. Gifts. So many obligations. But do you know the one thing that makes it all worth it? The food. Particularly the baked goods. So I thought I’d get an early start and test out a new fall recipe, and it was DELICIOUS! The perfect combination of tart and sweet. My little family gobbled it right up.

Homemade pie crust is the best, and usually I go that route. But we’ve had a super busy couple of weeks, and I took the easy way out with a pre-made crust. The recipe is super easy to follow. You make your crumble topping and the fruit filling and then assemble. Make sure to use a deep dish pie plate. Here’s the breakdown.

Ingredients:

Crumble Topping

  • ¾ Cup All Purpose Flour
  • ¼ Cup Packed Light Brown Sugar
  • ½ Teaspoon Cinnamon
  • A Pinch of Salt
  • ½ Stick Unsalted Butter Cut Into Small Pieces
  • ½ Cup Pecans Chopped

Fruit Filling

  • 5 Gala Apples (Peeled & Thinly Sliced)
  • 8 Ounces Fresh or Frozen (Not Thawed) Cranberries
  • ½ Cup Packed Light Brown Sugar
  • 3 Tablespoons All Purpose Flour
  • ½ Teaspoon Cinnamon
  • ¼ Teaspoon Salt
  • 2 ½ Tablespoons Lemon Juice
  • ½ Stick Unsalted Butter Cut Into Small Pieces

Directions:

Fruit Filling

  • In a large bowl, mix together your thinly sliced apples, cranberries, brown sugar, flour, cinnamon, salt and lemon juice

Crumble Topping

  • In a medium size bowl, mix together flour, brown sugar, cinnamon and salt
  • Hand mix in your butter pieces until clumps start forming
  • Stir in your pecans
  • Chill in the refrigerator until ready to use

Pie Assembly

  • Preheat oven to 425 degrees
  • Roll your crust out into your 13” pie plate and crimp the edges
  • Transfer your fruit filling into the pie crust
  • Dot the top of the pie with your butter pieces
  • Loosely cover with foil and bake about 30 minutes
  • Remove pie from the oven
  • Lower the oven temperature to 375 degrees
  • Sprinkle your crumble topping over the pie
  • Optional: Decorate the top with additional crust
  • Bake uncovered for about 45 minutes until the crumble is browned and the filling is bubbling
  • Remove from the oven and cool for 2 to 3 hours
